Overview
You will learn about molokhiya, one of Egypt’s oldest and most famous dishes, and an amusing cooking tradition that often accompanies it. The custom is known as a “molokhiya certificate,” which is referred to as Ghasib Molokhiya in English. It’s a playful ritual around the final seasoning of the soup. When molokhiya is cooked, cooks are asked to perform this gesture as they add garlic. They suddenly inhale with their mouths open while placing the garlic in the bowl. Before the cloves burn, they are dropped from the pan into the green soup. The hot fat hitting the molokhiya produces a loud sizzle, and the chef is expected to gasp dramatically at that moment. After a few final stirs, the molokhiya is ready. Along the way you’ll see how the sound and the small theatrical gestures are part of the dish’s character and cultural history.
